California Brown Rice Bowl

California Brown Rice Bowl Dinner September 7, 2010 It’s always fun to make a rice bowl. Just thinking about what I want to put on my rice excites me. A few nights ago I had a beautiful ripe avocado so I wanted to use it as a main ingredient for this rice bowl. Cucumber, sprouts, [...]

Thyme and Balsamic Glazed Meatballs with Kale Pasta

Thyme and Balsamic Glazed Meatballs with Kale Pasta Dinner September 6, 2010 The color of the balsamic vinegar glaze was seriously intense, but it tasted seriously delicious, too! This is a very easy glaze to make and a great way to enjoy your meatballs especially when you want something different from your usual tomato sauce. [...]

Tomato and Tofu Napoleon with Asian Meat Sauce

Tomato and Tofu Napoleon with Asian Meat Sauce Dinner August 18, 2010 Many of you probably thought this was tomato and “mozzarella”. The white layers are not mozzarella but tofu. This beautiful tomato came from my brother-in-law’s vegetable garden. Why are those vegetables from someone’s garden taste so good! This was served with Asian meat [...]

Arugula Risotto with Ginger Oyster Chicken

Arugula Risotto with Ginger Oyster Chicken Lunch August 7, 2010 I shouldn’t call this risotto, because it was not cooked in the traditional way. But I couldn’t really come up with any other good name to describe it. Steamed rice was slowly cooked in chicken stock so that the flavor was absorbed in the rice. [...]

Steak and Arugula Salad with Lemon Worcestershire Dressing

Steak and Arugula Salad with Lemon Worcestershire Sauce Dressing Lunch August 6, 2010 The restaurant salad can be boring at times. Staring at a salad in front of me, I’d be thinking “I wish these were arugula instead of iceberg lettuce”, or “I wish there were more than three red onion slices” or “I wish [...]

Collard Greens and Black-Eyed Pea Soup

Collard Greens and Black Eyed Pea Soup Lunch August 1, 2010 I made this soup when I needed to clean up the vegetable section in my fridge. I was not planning to make a blog post with this soup, but it turned out unexpectedly tasty, so I decided to write down all the ingredients here [...]

Cold Angel Hair Pasta Soup with Boiled Pork and Kimchi Dinner July 29, 2010 There are very thin noodles called “somen” which are made of wheat flour in Japan. Somen is usually enjoyed in summer and served cold. I was never a big fan of somen when I was in Japan, but since I can’t [...]

Cold Avocado Wasabi Angel Hair Pasta Dinner, July 26, 2010 I personally think avocado taste the best with soy sauce. But then I like soy sauce with anything (lol). Here is a cold angel hair pasta dish made with wasabi avocado sauce. It was served with shredded poached chicken, sliced red onion, and shiso (Japanese [...]

Terry and Kayla Make Dinner Together

Dinner July 17, 2010 Our niece, Kayla, from Arkansas is visiting Minnesota and stayed with us this weekend. Kayla and Terry volunteered and made dinner last night. Spaghetti and meat sauce. It was delicious! *My Red Currant Citrusade made today’s Foodbuzz Top9. Thank you [...]

Shrimp and Chicken Cellophane Noodles with Lime Sweet Chili Sauce Lunch June 26, 2010 Cellophane noodles are made from potato starch and corn starch. These are translucent, smooth, and very light. I enjoy salads likes this during the summer time. The Southeast Asian flavor in the sauce stimulates my appetite even when I don’t feel [...]
